Advice in dealing with bakers
Start narrowing down who your baker will be months in advance, the good ones are booked up solid. You should get everything they promise you in writing. If you agree on a 5 layer cake, then their invoice should very clearly specify it. Don't let them get away with ambiguous terms like "muli-layer cake", or "frosting decoration" or "topper". It must clearly spell out which extras you wanted. If you were promised a specific type of cake frosting, lace or other design, it should be included on your invoice as well. You want them to bake the cake that they promised you. If they don't write it down, how are they going to remember what you agreed to 3 months from now? Before you sign the contract and give any money, read the invoice and make 100% sure it's the exact cake you are expecting to get. Ask if they are delivering your cake to the reception to avoid getting blindsided by delivery charges. If you are going through your caterer, make sure it's all written down also. Try to get a package deal if they bake your Grooms cake.

Watch for the cutting fees on wedding cakes! Many hotels and reception venues will charge you a cake cutting fee if you don't order your cake through them. Some will charge you the fee even if you do! Verify that's accounted for in writing whether or not they will charge you.
